Who said you can’t have cake for breakfast? The kids will be trying to outwit you with the excuse that they can eat this cake because it has cereal as a topping!
I just felt the need to bake something this afternoon and wandered around my stockpile searching for something to put together. I found some French Vanilla cake mix and some Pebbles Boulders. I grabbed a jar of peanut butter to make some homemade peanut butter icing and ran up the stairs to the kitchen. The kids just stared at me in wonder. I don’t know if they were wondering what I was doing with those items or if they were wondering why I was laughing with my evil, “I’ve got a plan” laugh.
This is what you will need:
- Box of cake mix (yellow, white, French Vanilla, etc.) and ingredients written on the box
- Box of cereal (I used Pebbles Boulders which is chocolate and peanut butter flavored)
- 1 cup peanut butter
- 1/2 cup butter, softened
- 2 cups confectioner’s sugar
- 3 T. milk
Prepare and bake the cake according to the package directions. While it is baking, using a mixer, mix the butter and peanut butter until creamy. Then add the confectioner’s sugar 1/2 a cup at a time until thick.. Then add the milk 1 T. at a time until fluffy and creamy. Set the icing aside until the cake is cooled.
Spread the icing over the cake and then top with the cereal. Enjoy it with a nice, cold glass of milk!
