Regular and Candied Pumpkin Seeds

Preheat oven to 300 degrees.

Ingredients for Regular Seeds:

  • Extra virgin olive oil
  • Cleaned pumpkin seeds
  • Sea salt

Lay aluminum foil on a baking sheet. Coat with EVOO and lay the seeds across the sheet. Sprinkle some more EVOO and be sure the seeds are coated lightly. Sprinkle sea salt over the seeds and mix evenly.  Bake at 300 degrees for 1 hour, being sure to stir them every 20 minutes.

 

Ingredients for Candied Seeds:

  • Cleaned pumpkin seeds
  • 1 T. butter, melted
  • 2 T. white sugar
  • 1 T. brown sugar
  • 2 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • Sea salt

Lay aluminum foil on a baking sheet. Pour the seeds on to the sheet and then coat with the melted butter. Add the sugars, cinnamon and nutmeg and mix. Then add a desired amount of sea salt and mix. Bake at 300 degrees for 90 minutes, being sure to stir them every 20 minutes.
