I have recently gotten together with a great group of bloggers to bring you different tips, recipes and other little things that we can come up with daily. Summertime generally slows down for everyone in the computer world because we are spending more time outside, kids are outta school, BBQ’s, etc., so this is our way of bringing something different and fun when things slow down.
Our first topic is Mmmmmmmm Chocolate Monday!
Chocolate Chip Cookie-Brownie Cupcakes
These were so easy to make. All you need is a box of brownie mix (along with the ingredients to mix it) and a tube of chocolate chip cookie dough.
Prepare the brownie mix according to package directions and preheat the oven (according to the brownie mix directions). Spray cupcake tins (I ended up needing 21) and spoon 2 T. of brownie batter into them. Unwrap the cookie dough and cut it into 21 slices (or however many cupcakes you are making). Be sure to keep the round shape of the dough. Place your dough circles on top of each cup of brownie batter and place into the oven for approximately 20 minutes.
Using a toothpick, check to see if the middle of the brownie is done before taking it out to cool. Let them cool on a cookie rack and then enjoy with a nice glass of milk!

Chocolate Peanut Butter Bark!
Prep Time:15 Minutes
2 packages (4 oz. each) HERSHEY’S Semi-Sweet Chocolate Baking Bar, broken into pieces1-2/3 cups (10-oz. pkg.) REESE’S Peanut Butter Chips1 tablespoon shortening1/2 cup roasted peanuts or toasted almonds, coarsely chopped
1 Cover cookie sheet or tray with wax paper.
2 Place chocolate in medium microwave-safe bowl. Microwave at MEDIUM (50%) 1 minute; stir. If necessary, microwave at MEDIUM an additional 30 seconds at a time, stirring after each heating, until chocolate is melted and smooth when stirred.
3 Immediately place peanut butter chips and shortening in second microwave-safe bowl. Microwave at MEDIUM 1 minute; stir. If necessary, microwave at MEDIUM an additional 30 seconds at a time, stirring after each heating, until chips are melted and mixture is smooth when stirred; stir in peanuts.
4 Alternately spoon above mixtures onto prepared tray; swirl with knife for marbled effect. Gently tap tray on countertop to even out thickness of mixture. Refrigerate about 1 hour or until firm. Break into pieces. Store in cool, dry place. About 1 pound candy.
* To toast almonds: Heat oven to 350°F. Spread almonds in thin layer in shallow baking pan. Bake 8 to 10 minutes, stirring occasionally, until light golden brown; cool.
Oreo Ice Cream Sandwich Cake
1/2 cup hot fudge ice cream topping, warmed
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding
16 OREO Cookies, chopped (about 2 cups), divided
12 vanilla ice cream sandwiches
WHISK fudge topping and 1 cup COOL WHIP in medium bowl until blended. Add dry pudding mix; stir 2 min. Stir in 1 cup cookies.
ARRANGE 4 ice cream sandwiches, side-by-side, on 24-inch-long piece of foil; cover with half the COOL WHIP mixture. Repeat layers. Top with remaining sandwiches. Frost with remaining COOL WHIP; press remaining cookies into top and sides of dessert. Wrap loosely with foil.
FREEZE 4 hours.
Have you ever heard of Chocolate Gravy? Back in the South its big and alot of people make it for breakfast, lunch or dinner! So since this weeks theme is chocolate I thought I would send you a recipe……
1 cup granulated sugar or splenda sugar
1 tablespoon butter
1 1/2 cups milk
2 tablespoons flour
3 tablespoons unsweetend cocoa powder (we love Hersheys)
Mix all the dry ingredients in a heavy saucepan with a whisk. Using a whisk blends everything better than a spoon. Stir in the milk
Cook over medium heat stirring constantly. Remove the pot when the mixture is thick like pudding.
Add the butter. Stir in until completely melted. Serve over biscuits with a teaspoon of butter dolloped on top.
In the south they eat this with biscuits at breakfast, lunch or dinner. You can do it however you wish, if you haven’t tried it do so I think you will enjoy! Some people enjoy it over pancakes too. Try it for those of you who make it already your bound to say this taste like grandmothers.
Oh chocolate, how do I love thee. Actually, I’m not a big chocolate fan. UNLESS, it’s Dove Dark Chocolate. I am so hooked on Dove Dark Chocolate that my husband has to hide it so I don’t eat the whole bag. He gives me 1 – 2 pieces a day. Want to know a secret: I know where he hides it and help myself when he’s not around. LOL
