Frugal Pancakes

Do you like the convenience of pre-made pancakes that you can just pull out of the freezer, heat up and eat? Do you like how much they cost? First answer yes; Second answer no. Why buy a box of pancakes for $2.50-$3.00 that will last you about 2 days (depending on how many kids you have), when you can buy a box of pancake mix for $2.00 (the generic brand) and make enough pancakes to last you 2 weeks?  There are many kids of mixes out there so I prefer the kind you only have to add water to because it’s cheaper. I add some vanilla and a tablespoon of sugar to the mix to add a little umph. I then put them in the refrigerator to cool and then place in gallon-sized Ziploc freezer bags. It does require some planning and some time but really, not that much. You can even make some in different colors and shapes. I was going to make some heart shaped pancakes with red food coloring for Valentine’s Day, but I was out of red food coloring….oops. Try it out, see if you can manage to fit it in your schedule. Your wallet will thank you later and seriously, you’re kids won’t know the difference.
