Buffalo Chicken Stuffed Zucchini

YUM! This is such a quick and easy dinner to make and even the kids liked it!

Ingredients:

  • 2-3 zucchini
  • 2 breaded chicken patties per zucchini or 1 lb shredded chicken
  • Your favorite buffalo hot sauce
  • Breadcrumbs
  • Olive oil
  • Salt and pepper

Directions:

Cut zucchini lengthwise and place in baking pan. Sprinkle with olive oil and salt/pepper. Bake at 350 degrees for 15-20 minutes. Remove from oven and scoop out the inside of the zucchini. Place insides of zucchini in a separate bowl, making sure you cut them into small pieces. Also, bake chicken patties per package directions or prepare your chicken and shred. Add chicken to bowl of zucchini. Cut up the chicken patties if using them.

Add breadcrumbs and hot sauce to bowl and mix well. Scoop mixture into zucchini boats and top with more hot sauce and breadcrumbs. Place back into the oven and bake for another 15-20 minutes.

***Cooking times may vary for the zucchini depending on how big it is.
